So much great info here, thank you! I AM going to try this. I make kimchi regularly but haven't ever made sauerkraut. I'm thinking it's probably more versatile?? Don't get me wrong I love LOVE kimchi but the flavour is rather dominating (also no one else in my family will even try it!).
