I do look at notes so I quite like the follow option if I’m not yet sure I want something in my inbox but I’d like to keep an eye on what they’re publishing.

The easiest option is to scroll down to the bottom of an email from the publication you want to unsubscribe from and click ‘unsubscribe’.
If you want to do it on the Substack website navigate to your profile (click the three lines in the top right hand corner of the screen, then click on your profile at the top). You’ll see ‘Posts’, ‘Notes’, ‘Likes’, ‘Reads’. Click ‘Reads’, scroll down to the publication you want to unsubscribe from, click on the button next to the publication that says ‘subscribed’ and it will give you the option to unsubscribe.
I think Substack must have recently had a significant makeover. I started one at the end of November and it took me a couple of days to find the dashboard functions. It looks nothing like yours. do you know where I can go to on Substack support to get these updates features?
So this piece is written from the perspective of a reader on Substack, rather than a creator/writer. I haven't covered the creator dashboard here, which does look very different. However, if I'm navigating Substack as a reader, then all these pages still look the same -- I don't believe there have been any significant updates since I wrote this.

And although Substack would hate me for saying this, it's good to remember that you can simply subscribe to a newsletter with your email address, no additional details required, and enjoy someone's writing from your inbox!
