I would love to make this for my civil wedding next week but would need to double up on the recipe. Do you think it would be okay to do so? I’m worried about it being too heavy and not becoming so airy as i’d be using a stand mixer. Can’t wait, it looks divine! :)
I think it would work brilliantly! Tiramisu is a really reliable thing to scale up and down. I’m also honoured that you’d love to serve this at your civil wedding :) Airiness — I think you're totally fine to use a stand mixer but I would fold the whipped egg whites in by hand if you can! Hope it all goes super well and congratulations on getting married!!
Ahh how exciting! You can make this without the alcohol. If extracts are okay then I would add a touch of vanilla extract to the coffee (and use the best, most flavourful coffee available to you) and a drop or two of almond essence to the cream. Neither of these additions is strictly needed but they will add a bit of the flavour lost from the alcohol. I would be quite generous with the cocoa powder too.

The recipe will work perfectly without! But I would use the best coffee I could as it’ll have to do more of the heavy-lifting flavour-wise without the alcohol. :) I would also consider adding a little vanilla to the coffee (you could use vanilla beans if vanilla extract is a no). If extracts are okay with you I would also add a drop or two of almond essence to the cream to give it a little extra something. These are all optional, but they’ll boost the flavour a bit! And no, I’ve never tried the one at Al Dente — I will!
